Paris!
We ate very well in Paris, in both dedicated and shared establishments. Below is a list of some of the places that we went. Some are easier to get to than others, but Paris isn’t huge and transportation is very straightforward. Always let your server know about your dietary needs in the non-dedicated places.
In general, I found that places were clear about their ability to prepare and serve safe gluten free foods, either they could or could not, I just needed at ask.

For international travel, I have found using Google Translate very helpful. I can take a picture of a menu and have my phone translate it into english or type what I want to say to another person and translate. It has been a game changer in my efforts to personalize and specialize my communication in specific situations.
I would recommend finding a place to stay with a kitchen so that you can take advantage of the amazing markets and specialty food shops, like the rotisserie chicken and sausages from @Rotisserie Stevenot.
