Yes, you can travel and maintain your Gluten Free Diet.

For international travel, I have found using Google Translate very helpful. I can take a picture of a menu and have my phone translate it into english or type what I want to say to another person and translate. It has been a game changer in my efforts to personalize and specialize my communication in specific situations.

There are also a couple of options for pre-translated restaurant cards in various languages, Equal Eats and Celiac Travel.
