3-4 Tbsp olive oil (don’t be shy, less is not more)

8 cloves crushed garlic (you can add more or less if you’d like)

1 28oz jar crushed or diced tomatoes

1 tsp Herbs de Provenance

1 tsp cayenne pepper

1/2 tsp salt

1/2 tsp pepper


Add enough olive oil to cover the bottom of the pan and heat.

Sauté garlic until golden brown and add tomatoes, Herbs de Provence, cayenne pepper salt and pepper.

Turn heat down to a simmer and let sauce cook, stirring occasionally for 15-20 min then taste. The sauce can keep simmering, as it gets better with time, but it will thicken. If you’d like to keep it thin, you can add a bit of white wine or broth.

Tips:

This sauce can be used in a variety of ways: on pasta, over chicken, pork, fish, veggies, used in a tomato coconut curry or, if thickened, as a pizza sauce.

Make a double or triple batch and freeze the extra.

Stir in fresh basil just before serving.

Add a bit of sugar if you’d like to cut the acidity from the tomatoes.

Decrease cayenne pepper if you want to turn down the heat.

To increase the depth of the tomato flavor, add 1 - 2 tsp of sun-dried tomato paste. I love using the Amore brand.
