Makes one 8-inch square pan

7 ounces semisweet chocolate chips

3 ounces bittersweet chocolate chips

8 TBSP butter (I use salted)

3 TBSP cocoa powder

3 large eggs (room temperature)

7 ounces granulated sugar

2 tsp vanilla extract

2ounces almond flour

2 ounces brown rice flour

1 tsp ground cinnamon

1/2 tsp salt

5 ounces bittersweet chocolate chips

M&M’s for the top

Pre-heat oven to 350*

Grease & line one 8-inch square baking pan with parchment paper. The parchment paper will make it easier to remove the brownies from the pan once cool.

In a medium heatproof bowl, combine the semisweet chocolate, bittersweet chocolate and butter. Melt in microwave, stirring every 30 seconds until smooth. Whisk the cocoa powder in with the melted chocolate mixture, set aside and let cool.

In a separate bowl mix flours, cinnamon & salt together and set aside.

In a large bowl, whisk together the eggs, sugar & vanilla extract, then whisk in the melted chocolate mixture.

Gently fold the flour mixture in with the chocolate/egg mixture until just combined, then stir in bittersweet chocolate chips.

Pour batter into prepared pan.

Add M&M’s on top, before baking, for a little extra chocolate crunch.

Bake for 35 – 40 minutes.

Brownies will be done when a toothpick, inserted into the middle of the pan, comes out mostly clean (a few crumbs sticking to the toothpick is ok).

Let cool and serve.
