Almond Flour Chocolate Chip Banana Bread
9 oz almond flour
1 TBSP ground cinnamon
1/2 tsp ground nutmeg (I use fresh nutmeg)
1/2 tsp salt
1 tsp baking soda
3 eggs
6 oz dates
1/4 cup honey
1/4 cup vanilla whole milk yogurt
3 ripe bananas
1 tsp vanilla extract
5 oz chocolate chips
Pre-heat oven to 350*F. Grease large loaf pan and line with parchment paper.
Soak pitted dates in boiling water for 10 minutes to soften.
Measure and mix dry ingredients in large bowl, set aside.
In a blender add yogurt, honey, 1 banana and drained dates; blend until smooth.
Mash the remaining 2 bananas in a medium bowl with eggs and date mixture.
Add the banana mixture to dry ingredients and stir until combined, add chocolate chips.
Pour the batter into prepared pan and bake until toothpick comes out clean, 60 - 70min. Cool and remove from pan.
When I can, I double the recipe and freeze the second loaf.
