~Sugar Free Turkey Brine~

10-15 lbs Turkey

2 cups kosher salt

10 cups water (plus more)

1-2 bottles white wine

3 lemons cut into wedges

2 limes cut into wedges

1 onion roughly cut

1 leek green removed and roughly cut

1 head garlic peeled

1/4 cup peppercorns

2 TBSP Herbs de Provenance

2-3 packages fresh herb poultry mix

Any additional aromatics of your choice (see tips).

1 plastic brine bag

In a large pot dissolve salt in water over medium heat, set aside to cool, adding ice cubes to accelerate the cooling process.

Open up brine bag and place in roasting pan or cooler for support.

Rinse and dry turkey and place in brine bag.

Place wine, lemons, limes, fresh herbs, peppercorns and additional aromatics of your choice in the brine bag.

Once the salted water is cool, add to the brine bag.

Add additional water to cover the turkey.

Seal the bag and let the turkey soak for 12 - 24 hours in a refrigerator or cold garage if you live in cooler climates.

1 hour before roasting, take the turkey out of the brine, rinse well, and pat dry. If you don’t rinse the turkey well, it will be extra salty.

Rub with olive oil before roasting.

We roast our turkey in the Char-Broil, oil free, infrared fryer. The “frying” takes about 9 - 10 min per pound.

You can roast the turkey in a 350* oven for about 2.5 hours depending on the size. To roast the turkey evenly, not letting the breast meat dry out, start roasting with the breast side down, flipping it over half way through.

Roast until the internal temperature reaches 165*.

Let cooked turkey rest on the cutting board for 15 - 20min before slicing.

Tips:

Brining the turkey helps with keeping the bird moist and is a great opportunity to infuse flavor into the depths of the meat. I will often scavenge through my spice drawer and use what I find in addition to what the recipe call for. I have used cardamon pods, cumin seeds, and coriander seeds.
